Welcome to the Kikkoman Biochemifa Company Home page. Kikkoman's history can be traced back over more than 350 years to the production of soy sauce during the Edo period. Since its establishment, the company has been refining technologies for handling microorganisms such as yeast, Lactobacillus, and Aspergillus as part of its fermentation technologies, in order to provide food products and other commercial goods. Forty years ago, Kikkoman's Biochemical Division began manufacturing and sales activities using fermentation-based production by targeting various enzymes and other substances for use in clinical diagnostics and as raw materials for pharmaceuticals. Today, the Biochemicals Division offers a wide range of products including food safety and environmental hygiene monitoring systems, clinical diagnostic reagents, food processing enzymes, and various types of health food ingredients. The merits of Kikkoman's biochemical products have been demonstrated in a large number scientific papers, which have been published with the support of the companys Research Headquarters, which boasts a 100-year history, as well as the Kikkoman General Hospital, and other facilities. Food Safety and Environmental Hygiene Monitoring Systems
Kikkoman offers a broad range of Hygiene-related Assay and Detection Instruments, including Rapid Hygiene Monitoring Systems and Microorganism Detection systems. These devices operate based on chemical reactions between Luciferases, the enzyme that fireflies use to generate light, and ATP (adenosine triphosphate), which acts as a "proof of life" for all living organisms. Kikkoman offers high-quality enzyme for food processing applications through an original manufacturing system, based on extensive know-how in the field of purification technologies accumulated over many years-technologies that can be traced back to the original cultivation technologies developed for the fermentation of soy sauce. Kikkoman's food processing enzyme incorporate tannase, which prevents opacity in tea beverages.
Health Food Ingredients
Under the motto "Food and Health," Kikkoman is focusing on the health food business in order to respond to the needs of Japan's growing elderly population. Based on its experience in the development of pharmaceutical products, Kikkoman develops original, scientifically tested health food ingredients. Scientific achievements findings-related to product safety and effectiveness have been presented at academic conferences, where they received broad recognition. In addition to being supplied to the health food industry and general food industries in Japan and overseas, these ingredients are also used in Kikkoman's original health food products.
